Responsibilities:
- Lead and manage the onboard Chinese kitchen operations
- Plan, develop, and execute authentic Chinese menus aligned with cruise standards
- Ensure consistency in food quality, taste, presentation, and portion control
- Supervise, train, and schedule Chinese kitchen staff
- Coordinate with F&B management and other galley sections
- Ensure strict compliance with food safety, hygiene, and HACCP standards
- Manage inventory, ordering, storage, and cost control for Chinese ingredients
- Minimise food waste and maintain budget targets
- Handle special dietary requests, VIP meals, and guest feedback
- Maintain cleanliness, safety, and proper use of kitchen equipment
- Participate in ship safety drills and comply with maritime regulations
Requirements:
- Proven experience as Head Chef in hotel, restaurant, or cruise setting
- Strong leadership and team management skills
- Able to commence work immediately
