1. Station Handover & Setup (Mid-Day Arrival)
- Station Audit: Assess the current state of the dish pit; clear any backlog left from the lunch service.
- Machine Maintenance: Check water levels, temperature gauges, and chemical levels (detergent, rinse aid, sanitizer) in the commercial dishwasher.
- Restock: Ensure clean stacks of plates, bowls, and cutlery are returned to their respective stations for the upcoming dinner service.
2. Active Service Operations (Afternoon – Evening)
- Prioritization: Manage the flow of incoming items, prioritizing high-turnover tools like sauté pans, tongs, and specific glassware.
- Three-Compartment Sink Management: Manually scrub large pots, pans, and baking sheets that cannot fit in the machine, following the Wash, Rinse, Sanitize protocol.
- Waste Management: Monitor and empty trash, recycling, and compost bins regularly to prevent overflow and odors during peak hours.
- Floor Safety: Maintain a dry and slip-free workspace by mopping spills immediately and utilizing "Wet Floor" signage.
3. Support & Facilities (Ongoing)
- Basic Prep Assistance: When the dish volume is low, assist the culinary team with simple tasks like peeling vegetables or breaking down cardboard boxes.
- Chemical Handling: Safely replace chemical containers as needed, following all SDS (Safety Data Sheet) guidelines.
- Polishing: Ensure silverware and glassware are free of water spots before they return to the front-of-house.
4. Deep Clean & Close (Night End)
- Station Breakdown: Drain, clean, and de-lime the dishwasher at the end of the night. Clean the interior filters and spray arms.
- Nightly Sanitation: Scrub and sanitize all work surfaces, hand sinks, and the exterior of the dish machine.
- Floor Care: Perform a comprehensive "deck scrub" of the dish area floors, ensuring all drains are cleared of food debris.
- Final Reset: Organize the dish storage areas so the morning shift can begin with an orderly environment.
Job Types: Full-time, Permanent
Pay: Php16,000.00 - Php18,000.00 per month
