Indian Cook

Position Purpose

The Indian Cook is responsible for preparing and cooking authentic Indian cuisine, ensuring high-quality dishes that align with traditional recipes and meet customer expectations. The role involves working in a busy commercial kitchen, maintaining food safety and hygiene standards, and contributing to the smooth daily operations of the restaurant.

Key Responsibilities

  • Prepare and cook a wide variety of Indian dishes including curries, biryanis, breads (naan, roti, paratha), tandoori items, and vegetarian/vegan specialties.
  • Operate and maintain specialized Indian kitchen equipment such as the tandoor oven, dosa hotplate, and spice grinders.
  • Ensure dishes are prepared to consistent quality, taste, and presentation standards.
  • Plan and manage daily food preparation and cooking schedules.
  • Monitor stock levels, assist in ordering ingredients, and minimize wastage.
  • Ensure compliance with all food safety, hygiene, and health & safety regulations.
  • Assist in developing and updating menus with seasonal or special items.
  • Train and guide junior kitchen staff or kitchen hands as required.
  • Work collaboratively with the Head Chef, management, and team members to deliver excellent customer satisfaction.

Skills and Competencies Required

  • Proven experience (minimum 3–5 years) as an Indian Cook or Chef in a commercial kitchen.
  • Strong knowledge of Indian cooking methods, spices, and regional cuisines (North Indian, South Indian, etc.).
  • Ability to work with tandoor ovens, dosa pans, and other Indian cooking equipment.
  • Excellent time management and ability to work under pressure in a fast-paced environment.
  • Strong understanding of food hygiene and safety regulations.
  • Team player with good communication skills.

Qualifications

  • Formal cookery/culinary qualification (preferred but not mandatory if proven experience).
  • Food Safety Certification (advantageous).

Work Conditions

  • Work involves evenings, weekends, and public holidays as per restaurant requirements.
  • Standing for extended periods and handling hot equipment and heavy pots may be required.
  • Rostered shifts with flexibility as required by business needs.
