Meat Butcher

Job Overview

Our Inasal restaurant is looking for a skilled Butcher who can prepare and portion meats according to traditional Inasal-style requirements. You will be responsible for ensuring that all chicken, pork, and other meats are cut, cleaned, and prepared to meet our marination, skewering, and grilling standards. This role is essential in maintaining the authentic taste and consistency of our Inasal dishes.

Key Responsibilities

• Cut, clean, debone, and portion chicken specifically for inasal-style cuts (e.g., paa, pecho, isol, atay/baticolon).
• Prepare and portion pork for barbecue, liempo, and other grilled items.
• Assist in skewering meat portions according to restaurant standards.
• Ensure proper marination preparation by coordinating with kitchen staff.
• Maintain cleanliness and sanitation of the butcher area, tools, and cold storage.
• Inspect and verify the quality and freshness of all meats delivered.
• Properly label, store, and rotate meat products (FIFO).
• Maintain accurate inventory and report shortages to the Kitchen Supervisor/Chef.
• Follow DOH food safety standards and ensure hygienic handling at all times.

Qualifications

• Proven experience as a Butcher, Meat Cutter, or similar role (experience in Inasal or grilling restaurants preferred).
• Strong knowledge of Filipino/Inasal-style chicken and pork cuts.
• Physically fit and able to handle repetitive tasks, cutting, and lifting.
• Ability to work efficiently in a fast-paced kitchen environment.
• Good team coordination and communication skills.
• Willing to work weekends, holidays, and shifting schedules.

Preferred Skills

• Experience in preparing meats for skewering and marination.
• Familiarity with Filipino grilling traditions (Inasal, BBQ, Ihaw-ihaw).
• Strong attention to detail and consistency in portioning.

Pay: Php18,000.00 - Php19,000.00 per month
