The Monarch San Antonio - A Legacy of Service and Sophistication
The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Summary
The Pastry Chef is responsible for leading all pastry and bakery operations within the hotel, delivering exceptional desserts and baked products that reflect five-star luxury standards. The role requires creativity, precision, strong leadership, and strict adherence to quality, hygiene, and brand standards.
Essential Functions
Culinary & Production
- Create, develop, and execute high-quality desserts, pastries, breads, chocolates, and confections for all food outlets, banquets, events, and room service
- Design seasonal and signature dessert menus aligned with the hotel’s luxury brand identity
- Ensure consistent taste, texture, presentation, and portion control
- Oversee production for large-scale banquets, weddings, and VIP functions
- Maintain innovation by staying current with global pastry trends and techniques
Leadership & Management
- Lead, train, and motivate the pastry team,
- Schedule staff efficiently to meet operational needs
- Conduct performance evaluations and ongoing skills development
- Foster a professional, disciplined, and collaborative kitchen environment
Quality, Hygiene & Safety
- Ensure full compliance with HACCP, food safety, and sanitation standards
- Maintain cleanliness and organization of pastry kitchens and storage areas
- Enforce luxury hotel standards for grooming, discipline, and professionalism
Cost Control & Administration
- Manage food costs, waste control, and inventory
- Source premium ingredients and liaise with approved suppliers
- Prepare budgets, forecasts, and ordering plans
- Ensure optimal use and maintenance of pastry equipment
Guest Experience
- Customize desserts for VIP guests, special dietary requirements, and allergies
- Collaborate with service teams to ensure seamless guest satisfaction
Other Duties
- Perform any other duties as assigned.
Qualifications & Experience
- Diploma or degree in Pastry Arts / Culinary Arts preferred
- Minimum 5–10 years of pastry experience, with at least 2–3 years in a luxury or five-star hotel
- Strong expertise in chocolate, sugar work, viennoiserie, plated desserts, and artisan baking
- Food Manager Certification Required
