About Us
It's a Trap is a 100% plant-based specialty coffee shop and micro bakery on Aungier Street, Dublin. Everything on our menu is made in-house daily — from our specialty coffee to our baked goods and food — and we've built a loyal following through obsessive attention to quality, a strong community presence, and a brand people genuinely connect with.
We're growing, and we're looking for the right person to grow with us.
The Role
This is a senior, full-time, permanent position. You will be the lead voice on the floor — owning coffee standards, driving food service quality, contributing to seasonal menu development, and leading the FOH team through daily operations.
This is not a stepping stone. We want someone who takes real ownership, leads from the front, and wants to be a central part of what It's a Trap becomes next.
What You'll Be Responsible For
- Leading and managing a team of baristas across daily service
- Maintaining and raising the standard of our specialty coffee program — dial-ins, recipes, consistency, equipment
- Ensuring food and treats are served to the highest standards, consistently
- Contributing to seasonal recipe and product development alongside the founders
- Training, mentoring, and developing the FOH team
- Rota management, scheduling, and shift organisation
- Stock management, ordering, and supplier liaison
- Upholding and enforcing HACCP and food safety procedures
- Opening and closing responsibilities
- Driving a positive, high-energy floor culture during busy service
What We're Looking For
- Minimum 3 years specialty coffee experience in a high-volume environment
- At least 1 year in a leadership or supervisory role
- Strong espresso knowledge — dial-ins, equipment troubleshooting, workflow efficiency
- A genuine interest in food, flavour, and seasonal creativity
- Experience with rota management and stock/ordering responsibilities
- HACCP knowledge and a solid commitment to food safety standards
- A hands-on, lead-from-the-floor attitude
- Someone who thrives under pressure and brings energy to a busy shift

It's a Trap is a 100% plant-based establishment. The use of any animal-based products on our premises is strictly prohibited. We also operate a zero-tolerance smoking policy for all staff, on and off premises during work hours. These are conditions of employment, not preferences.
Pay: €33,000.00-€34,000.00 per year
